Book Pistachio Baklava gets its name from its shape — each piece is cut and folded open like the spine of a book, creating two thick, layered phyllo halves that fan outward around a generous pistachio filling. The folded format means you get more phyllo layers per bite than a standard diamond-cut piece, and the exposed pistachio filling sits right at the center where the “pages” meet — making it one of the most visually striking pieces in the baklava case.
