Mushabak Iraqi is a traditional Iraqi fried confection — thin batter piped through a funnel or squeeze bottle into hot oil in circular, web-like patterns, then fried until golden and crispy before being soaked in a light sugar syrup. The result is a delicate, crunchy sweet with an intricate lacy shape that’s as beautiful to look at as it is to eat. Mushabak is a cousin of the South Asian jalebi, but the Iraqi version has its own distinct character — less intensely sweet, with a lighter, more airy crisp.
